This sheep's milk cheese is from the Basque region of France. It has a hint of floral and grassy sweetness with a nutty flavor. One of the first "blonde" cheeses. Thousands of years old. Best from March through May. The curds are heated, molded, lightly pressed, salted, and aged in cool caves. Beverage suggestions: Dry white wines (Pouilly-Fume, Chardonnay).
