Keeps cellular structure of foie gras intact: excellent texture, enzymatic decay of liver cells is stopped, less than 5% rendered fat. Hygienic process implemented in state of the art USDA facilities. Raw, uncooked, deveined immediately after harvest. Vaccum packed and butterflyed on a tray, 500g (17.6oz).
